Grilled Chicken

Marinate the chicken in oil with old bay and parsley for at least an hour. Cook on a grill until thoroughly cooked. Dress the Kaiser roll with the dressings, spinach and tomato. Serve hot.
Flap Jacks

6 oz of butter

6 oz of light brown sugar (English equivalent demerara sugar)

8 oz of oat flakes (English equivalent rolled oats)

Pinch of Salt

You will need a shallow tin approximately 8 inches by 12 inches

This recipe will make approximately 16 flap jacks
Directions -
Warm and beat the butter. Mix this together the sugar, oats and the salt, then stir in the butter. Tip the mixture into a greased shallow jelly tin (in England this is know as a Swiss roll tin) and then press together, smooth the surface with a knife.
Stand the tin on a baking-tray and bake for approximately 30 minutes at 375°F.
When the cooking is complete remove the tin from the oven and leave it for a few minutes. While it is still warm cut it into approximately 16 squares or fingers, and leave it in the tin until it is cold.
These are easy and inexpensive to make and are ideal for baby showers, or in fact at anytime.
Chicken, Rice, and Walnut Casserole

2 tablespoons butter

2 onions, minced

8 cups brown rice, cooked

1 and half cups sharp cheddar cheese, grated

Half cup Parmesan cheese, freshly grated

4 large eggs, lightly beaten

1 cup chicken broth

2 garlic cloves, minced

1 teaspoon dried sage
-
Half cup teaspoon cayenne
-
pinch of salt and pepper

Half cup walnuts, chopped
-
1 cup fresh parsley, chopped

3 cups cooked chicken, cut in bite-size pieces
Preheat oven to 350 degrees. Melt butter in small skillet. Sauté onion until translucent. Combine onion with all remaining ingredients except walnuts and quarter cup cheddar cheese. Transfer to lightly oiled 2-quart baking dish. Top with walnuts and remaining cheese. Bake 30-40 minutes or until top is golden. Serves 8-10.
