Hot Open Faced Vegetarian Club
Ingredients-
Directions -
Fry the zucchini, onions, mushrooms, broccoli, and green peppers till soft. Take the Kaiser rolls and coat with butter, garlic, eggplant, tomato, and Swiss cheese. Put the bottom half in the oven and allow cheese to melt. Once melted, remove from the oven, and top with the fried vegetables.
Cover with Swiss cheese and allow that layer of cheese to melt.
Vegetarian Wrap Ingredients-
Directions -
On tortilla wrap, dress with the honey mustard and lettuce. Layer on eggplant, tomato, cucumber, Swiss, and Colby. Wrap the sides and roll closed.
Vegetarian Club
Ingredients-

3 slices wheat bread -toasted
-
tomato slices
-
fresh spinach - 8-10 leaves per club
-
Swiss cheese 2 slices per club

leaf lettuce
-
honey mustard
-
Italian dressing
-
4 sliced mushrooms per club.
Directions -
Start with marinating the mushrooms in the Italian dressing (this can be done the day before).
Take 2 slices of bread and dress with lettuce and spinach. Top the spinach with a spoonful of mushrooms. Add a tomato and a slice of cheese. Layer with bread slices. Place 4 toothpicks one at each corner. Cut in a X shape.
Vegetarian Burger
Ingredients-
Directions -
Take sliced eggplant and dip it in the egg substitute then into the bread crumbs. After the eggplant is coated evenly, fry till soft on the inside in soy butter. Once cooked cover in soy cheese and allow to melt. Place the fired eggplant on a paper towel and allow to drain. Serve them each on a hamburger bun. Dress each bun with lettuce, tomato, and allow the guests to place the toppings they want on their burger.
Veggy Pizza
Ingredients-

1-12 inch pizza crust

spinach pesto
-
ricotta cheese
-
1-cup sliced tomato
-
1-cup cooked broccoli
-
provolone cheese
Directions -
Spread the pizza crust with pesto. Top with provolone cheese, tomatoes, and broccoli. spoon on a few good dollops of ricotta. Bake in the oven at 400 for 10 minutes or till the crust forms.
Cucumber Sarndwiches
Ingredients-
Directions -
Cut the crusts off the bread then butter the bread.
Peel the cucumber and slice thinly.
Arrange the cucumber on one slice of bread and lightly salt if desired.
Top with the other slice of bread.
Cut into four triangles.
Cover the sandwiches until required to prevent them drying out. Sandwiches are of course an ideal food for your baby shower. They are also quick and easy to prepare and inexpensive and they taste good too.
The English are particularly fond of cucumber 'sarndwiches' and like to eat them in the garden on warm summer days for Afternoon Tea, with cakes or biscuits (cookies) and of course a pot of tea.
