Baby Shower Side Dishes Recipes

 
Classic Mac and Cheese with a twist

Ingredients -

  • 2 boxes Wheel Pasta (looks like little Ferris wheels)
  • 1 small box of soft cheese cubed
  • 1/4 cup Salsa
  • 5-lbs cooked peeled potatoes mashed
  • 1/2 cup- 1/2 & 1/2
  • 1/2 tablespoon butter
  • 1/4 cup chives
  • 1/2 cup sour cream

Directions -

Cook your noodles according to the instructions on the box. Drain and when hot add your cubes of cheese. Salt and pepper to taste. If the cheese Mixture is too thick, thin it with a bit of half and half. Take the mashed potatoes and add the 1/2 & 1/2, butter, chives and sour cream. Blend well and till smooth. Put in pastry bag with decorative tip. Squeeze onto the macaroni and cheese and bake in the oven at 350 till the tips of the potatoes turn a golden brown.(about 10 minutes) baby flowers,baby gift baskets,new baby gift

 

AJ's Potato Salad

Ingredients -

  • 5lbs potatoes - cooked peeled and cubed fine
  • 1/4 cup real bacon bits
  • 1 teaspoon dry mustard
  • 1/2 finely chopped spanish onion
  • Salt
  • Pepper
  • 1 TBSP chives
  • 2 hard-boiled eggs
  • Mayonnaise

Directions -

Combine a pinch of salt and pepper, with a teaspoon of dry mustard Toss the mayo over the potatoes, then add the spices and bacon. Mix in peeled and finely chopped eggs. Decorate with chives and fresh tomatoes.

 

Spaghetti Squash

Ingredients -

  • 1 ripe spaghetti squash
  • 2 sticks of butter
  • salt
  • pepper

Directions -

Cut the squash in half and de-seed. Lay a stick of butter in each side. Add a dash of salt and pepper to taste. Cover the halves in foil and lay on a baking pan. Bake at 350 until the squash separates easily (about an hour). To serve, take a large spoon and scoop out the squash (it should come out fairly easily). Add extra pepper and salt if needed.

 

Cole Slaw

Ingredients -

  • 1 head white cabbage
  • 1 head red cabbage
  • 2 cups heavy mayonnaise
  • 1/2 cup sugar
  • 1/2 cup red wine vinegar
  • 3 tablespoons poppy seeds
  • 2 large carrots

Directions -

In a large bowl mix vinegar, mayonnaise, sugar, and poppy seeds. Stir till its smooth. In another bowl, mix thinly sliced cabbages and carrots. Place the cabbage mixture in a large plastic bag.

Pour over the mixture the mayonnaise mixture, and shake vigorously. Keep cold till served.

 

Veggie Medley

Ingredients -

  • 1 tablespoon butter
  • 1 tomato- diced
  • 1 clove garlic- minced
  • 8 mushrooms- sliced
  • 2 yellow squash- cubed
  • 2 zucchini- cubed

Directions -

In large skillet, fry tomatoes, garlic, and butter, slowly adding mushrooms and squash. Lightly fry for 5-10 minutes. Place in a baking dish and bake at 350 for an additional 10 minutes or until all vegetables are soft. For a more filling approach, add rice.

 

Fantastic Chicken Salad!

Ingredients -

  • 4 whole boneless chicken breasts garlic powder salt and pepper
  • 2 tablespoons olive oil
  • 2 tablespoons vinegar
  • 2 tablespoons orange juice
  • 1 head romaine lettuce, chopped
  • 1 head iceberg lettuce, chopped
  • 1 bunch spinach, torn
  • 8-ounce package bean sprouts
  • 4 ounces Swiss cheese, shredded
  • Quarter cup fresh dill, chopped
  • 3 avocados, peeled and quartered
  • 6-ounce can ripe olives, pitted and drained
  • 8-ounce can sliced water chestnuts, drained
  • 4 eggs, hard-boiled and quartered
  • 1 and a half -ounce jar pimientos, sliced 1 red onion, sliced fresh mushrooms (optional)

Dressing.

  • 1 pint mayonnaise
  • quarter cup chili sauce
  • quarter cup pickle relish
  • 2 tablespoons onion, grated

Preheat oven to 350 degrees. Season chicken with garlic powder, salt, and pepper. Bake about 30 minutes or until tender. Cut into large chunks. Marinate in oil, vinegar, and orange juice 24 hours in refrigerator. When ready to serve, combine remaining salad ingredients with chicken. Mix well. Combine dressing ingredients. Toss with salad. Serves 14.
